Tabbouleh is a Middle Eastern dish traditionally made with bulgur wheat. This recipe uses barley, a Wyoming-grown grain!
Ingredients:
½ cup barley
2 cups chopped flat-leaf parsley
2 medium tomatoes, chopped
2 cucumbers, peeled, seeded, and chopped
1 scallion, finely chopped
2 cloves garlic, minced (or more to taste)
3 tablespoons extra-virgin olive oil
4 tablespoons fresh lemon juice (more or less to taste)
Directions:
Combine barley with 1 cup water, bring to boil then simmer for 20-25 minutes until done or when all the water is absorbed and grains are cooked through. Toss barley with all other ingredients.
Note:
Eat salad as is or serve alongside Spiced Lamb.
