Fresh Mint & Almond Pesto

Yield: about 1 cup
This pesto is great used as dip, spread, on a pizza or in pasta.

Ingredients:
4 handfuls fresh mint (washed, drained well)
1 clove fresh garlic, pressed
5-6 tablespoons extra virgin olive oil
1/4 cup almonds

Directions:
Puree all ingredients in food processor until the mix has a smooth consistency.

Note:
Variations – add 1/4 cup grated Parmesan cheese or 1/4 cup pureed roasted red pepper.
