Homemade Granola

Yield: about 15 cups

Ingredients:
6 cups rolled oats
1 cup wheat bran
1 cup ground flax seed
1 cup wheat germ
½ cup chopped almonds
¼ cup walnuts or pecans
¼ cup pumpkin seeds
½ cup sunflower seeds
½ cup cooking oil
1 cup honey
1 tablespoon vanilla
1 cup dried fruit, such as raisins, cranberries, cherries etc.

Directions:

  1. In a large bowl, combine all dry ingredients, except dried fruit.
  2. Combine oil, honey and vanilla in a saucepan and heat slightly.
  3. Pour oil mixture over dry ingredients; mix thoroughly.
  4. Transfer to 12x8-inch baking pan.
  5. Bake at 300 F about 50 minutes, stirring every 10-15 minutes until lightly toasted throughout.
  6. After removing from the oven, fold in dried fruit while mixture is still warm.
  7. Cool, stir and store in airtight container.
