Massaged Kale Salad

Ingredients:
1 bunch kale
1-2 tablespoons olive oil
1 teaspoon sea salt

Directions:
Wash and chop kale. Add to a bowl. Drizzle with olive oil and sprinkle with salt. With clean hands massage kale until kale turns a bright, dark green and is reduced as if slightly cooked. Serve and eat immediately or use as base for salad variations.

Variations:

  1. Substitute toasted sesame oil for olive oil and sprinkle w/ toasted sesame seeds for an Asian flavor.
  2. Add shredded beets, carrots, chopped avocado and sliced hard-boiled eggs for a heartier salad.
