Pumpkin Bran muffins

Yield: 12 muffins
This is a healthy, yet indulgent, way to enjoy pumpkin which provides a healthy dose of beta carotene and fiber.

Ingredients:
1 cup all-purpose flour
1 cup brown sugar
1/3 cup whole-wheat flour
1/4 cup wheat bran
3/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1 16-ounce can solid pack pumpkin or 2 cups of fresh pumpkin puree
3 eggs
2 tablespoons molasses

Directions:
Grease muffin tins or line tins with muffin papers. Mix all-purpose flour and brown sugar. Stir in whole-wheat flour, bran, baking soda and spices. In a separate bowl, combine remaining ingredients. Stir into flour mixture. Pour into 12 muffin cups, no more than 2/3 full. Bake at 375 degrees F for 20-25 minutes.
