Pumpkin Chili

Yield: 8 servings

Ingredients:
½ pound lean ground beef
½ cup chopped onion
½ cup chopped green pepper
3 cups (or 2 cans) cooked kidney or pinto beans
1 can whole tomatoes
1 8-ounce can tomato sauce
2 cups cooked fresh pumpkin (or 1-16oz can)
1 4-ounce can green chilies (optional)
2 cups water
2-3 teaspoons chili powder
Salt to taste

Directions:

  1. Brown ground beef, onion and green pepper in large pan. Drain fat.
  2. Add remaining ingredients. Cover and simmer for 30 minutes or longer. Add a small amount of water if chili gets too thick.
