Zucchini Saldana

Ingredients:
3 slices of bacon cut up into ½” pieces
1 large zucchini, sliced in rounds about 1/4"
1-2 large tomatoes cut into wedges
1 large onion, sliced into thin rings
1-2 cloves garlic, mashed (optional)
Dash hot chili sauce, pepper to taste

Directions:
Cook bacon until crisp. Remove from pan. Sauté onions in bacon drippings until translucent, then add zucchini and garlic and cook until soft. Add tomatoes and a dash of chili sauce plus pepper if desired. Add a little water and cover to cook for a few minutes. Serve with bacon on top. Good to make in August when most of the ingredients are in the garden!
