Keeping your kitchen clean and handling food safely reduces the chance of spreading bacteria that causes foodborne illness. To do this, follow the four steps for a safe kitchen. These four steps come from <a href=\"https:\/\/www.fightbac.org\/\" data-type=\"URL\" data-id=\"https:\/\/www.fightbac.org\/\" target=\"_blank\" rel=\"noreferrer noopener\">Fight BAC<\/a> by the Partnership for Food Safety Education.&nbsp;<\/p>\n\n\n\n<div style=\"height:30px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-1 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:40.84%\">\n<h2 class=\"wp-block-heading\">Clean<\/h2>\n\n\n\n<div style=\"height:25px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p style=\"font-size:18px\">The first line of defense against foodborne illness is keeping a clean kitchen. This includes thoroughly washing utensils and cooking surfaces during the preparation and cooking process, washing hands before and after touching food, and properly washing produce. Allow to air dry or wipe dry with a clean paper towel.<\/p><p><em>\u2022<\/em>  Make a fresh bottle of solution weekly to ensure effectiveness.<\/p><\/blockquote>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:5%\">\n<hr class=\"wp-block-separator has-text-color has-background has-white-background-color has-white-color is-style-default\"\/>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-vertically-aligned-top is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:55%\">\n<p>\u2022  Wash hands for 20 seconds with warm water and soap before and after touching food.&nbsp;<\/p>\n\n\n\n<p>\u2022 Wash hands after touching raw meat, poultry, fish, eggs, and after using the bathroom, changing diapers, and touching pets.&nbsp;<\/p>\n\n\n\n<p>\u2022 Keep your work area clean and wash counter tops with hot soapy water as you cook.&nbsp;<\/p>\n\n\n\n<p>\u2022 Use hot soapy water to clean dishes, cutting boards, utensils, tables, and counters.&nbsp;<\/p>\n\n\n\n<p>\u2022 Use clean dishes (not used in cooking) to serve food.&nbsp;<\/p>\n\n\n\n<p>\u2022 Wash taste-testing utensils after each use.&nbsp;<\/p>\n\n\n\n<p>\u2022 Rinse fruits and vegetables under cool running water before eating, peeling, or cutting.&nbsp;<\/p>\n<\/div>\n<\/div>\n\n\n\n<div style=\"height:55px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-3 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:40%\">\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" width=\"1024\" height=\"683\" src=\"https:\/\/wyoextension.org\/simply-centsible-nutrition\/wp-content\/uploads\/2020\/10\/cuttingboard-herbs_spices-2419055_1920-1024x683.jpg\" alt=\"scissors and herbs on plastic cutting board\" class=\"wp-image-5186\"\/><\/figure>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:5%\">\n<hr class=\"wp-block-separator has-text-color has-background has-white-background-color has-white-color is-style-default\"\/>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:55%\">\n<h2 class=\"wp-block-heading\">Separate<\/h2>\n\n\n\n<div style=\"height:25px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Keep raw meat, poultry, seafood and eggs separate from all other foods. When these raw foods contact other foods, cross-contamination can occur. Cross-contamination is when bacteria from raw foods spread to ready-to-eat foods. These bacteria can make you very sick. Keep these tips in mind to avoid cross contamination.&nbsp;<\/p>\n\n\n\n<div style=\"height:25px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>\u2022  Separate raw meat, poultry, seafood, and eggs in your grocery cart, shopping bags, and in the refrigerator.&nbsp;<\/p>\n\n\n\n<p>\u2022 Use two cutting boards: one for meat, poultry, and seafood and one for all other foods. Clean cutting boards thoroughly between foods and sanitize using the sanitizing solution from the previous page.&nbsp;<\/p>\n\n\n\n<p>\u2022 Never place cooked food on a plate that held raw food and use clean utensils.&nbsp;<\/p>\n<\/div>\n<\/div>\n\n\n\n<div style=\"height:55px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Cook<\/h2>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-4 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:55%\">\n<p style=\"font-size:18px\">In order for cooked food to be safe, it needs to reach a high enough temperature to kill the bacteria. The right temperature is different for different foods. Using a food thermometer is the best way to make sure that food is hot enough. Keep these tips in mind and use the safe temperatures to cook food to the right temperature.<\/p>\n\n\n\n<p>\u2022  Test your food thermometer to make sure it reads temperatures accurately.&nbsp;<\/p>\n\n\n\n<p>\u2022 Use a food thermometer to check if foods are done, testing in the thickest part of the food for the safe temperature.&nbsp;<\/p>\n\n\n\n<p>\u2022 Keep hot foods hot during potlucks, buffets, and other gatherings.&nbsp;<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:5%\">\n<hr class=\"wp-block-separator has-text-color has-background has-white-background-color has-white-color is-style-default\"\/>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:40%\">\n<p class=\"has-text-align-center has-white-color has-text-color has-background\" style=\"background-color:#3478c8\">Food Thermometer Testing<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-style-default is-layout-flow wp-block-quote-is-layout-flow\"><p><em>\u2022<\/em>  Fill a large glass with  ice and add water.<\/p><p><em>\u2022<\/em>  Immerse the food thermometer stem at least 2 inches into the ice water, without touching the sides or bottom of the glass.<\/p><p><em>\u2022<\/em>  Wait 30 seconds.<\/p><p><em>\u2022<\/em>  Without removing the stem from the ice, hold the adjusting nut under the thermometer head with pliers and turn head so the pointer reads 32\u00b0F. <\/p><cite>This method works with analog [non-digital] thermometers<\/cite><\/blockquote>\n<\/div>\n<\/div>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large is-resized\"><img decoding=\"async\" src=\"https:\/\/wyoextension.org\/simply-centsible-nutrition\/wp-content\/uploads\/2020\/10\/meatthermometer-foodsafety_meat-4616902_1920-1024x767.jpg\" alt=\"food thermometer in cooking meat\" class=\"wp-image-5193\" width=\"774\" height=\"579\"\/><\/figure><\/div>\n\n\n\n<div style=\"height:55px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Chill<\/h2>\n\n\n\n<p style=\"font-size:18px\">Some foods, like dairy, meat, and pre-cooked foods need to be chilled to keep them safe. The cold refrigerator slows the growth of bacteria that can make you sick, but does not kill them. Keep these tips in mind to properly chill foods.&nbsp;<\/p>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-5 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:10%\"><\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:80%\">\n<p>\u2022 Put cold foods away as soon as you get home from the grocery store.<br><\/p>\n\n\n\n<p>\u2022 Don\u2019t let raw meat, poultry, seafood, eggs, dairy, or cut fruits and vegetables sit at room temperature for more than 2 hours.<br><\/p>\n\n\n\n<p>\u2022 Throw away questionable food without tasting.<br><\/p>\n\n\n\n<p>\u2022 Keep the freezer a 0\u00b0F or below. Keep the refrigerator at 40\u00b0F or below.<br><\/p>\n\n\n\n<p>\u2022 Don\u2019t overfill the refrigerator so that there is enough room for air to circulate.<br><\/p>\n\n\n\n<p>\u2022 When packing food for lunches, picnics, barbecues, and other outings keep cold foods cold using ice, ice packs, and coolers.<br><\/p>\n\n\n\n<p>\u2022 Marinate food in the refrigerator and do not reuse marinades.<br><\/p>\n\n\n\n<p>\u2022 Store large quantities of leftovers in several shallow containers to help the food cool faster in the refrigerator.<br><\/p>\n\n\n\n<p>\u2022 Thaw foods in the refrigerator, cold water, or the microwave, not at room temperature. Cook foods thawed in cold water or the microwave immediately.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:10%\"><\/div>\n<\/div>\n\n\n\n<div style=\"height:55px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Know Safe Temperatures<\/h2>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-6 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:25%\">\n<p>Cook all poultry, soups, casseroles, and leftovers to 165\u00b0F. This includes ground chicken, turkey and game birds. For microwave reheating, stir and let rest 2 minutes after reaching 165\u00b0F.&nbsp;<\/p>\n\n\n\n<div style=\"height:100px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Cook fish to 145\u00b0F.
