Plants growing under grow lights.
Rural Micro-Farms owners Jaime and Michael Smith of Riverton offer fresh microgreens and sprouts at several venues in Fremont County.
Spring rolls
Fresh microgreens add color and texture to many dishes, and are also packed with vitamins, minerals, and antioxidants. A Rural Micro-Farms customer added pea shoots, kale micros, and onion micros to these spring rolls. Other ingredients include cucumbers, carrots, and bean thread noodles.
