Jaime and Michael Smith, owners of Rural Micro-Farms in Riverton, offer fresh microgreens and sprouts at the Wind River Farmers’ Market.
Fresh microgreens add color and texture to many dishes, and are also packed with vitamins, minerals, and antioxidants. A Rural Micro-Farms customer added pea shoots, kale micros, and onion micros to these spring rolls. Other ingredients include cucumbers, carrots, and bean thread noodles.
