David Thorne of Sheridan offers his homemade, small-batch sauerkraut at Cross E Dairy & Beef and through direct sales. He shreds the cabbage with an antique mandoline, right. The sauerkraut is made from cabbage grown at Lloyd Craft Farms near Worland.
David Thorne makes homemade sauerkraut using the “dry brining” process, which means adding just the right amount of pickling salt to the cabbage, but no extra water. He uses the large wooden oak post, left, to mechanically break the cell wall of the cabbage, and this is where the water comes from.
