Macaroni & Cheese

Cheesy whole-grain noodles bring a healthy serving of grains to this family favorite.

Ingredients
 

  • 2 cups whole-grain macaroni
  • ½ cup onion chopped
  • 1 teaspoon canola oil
  • ½ cup CNP Magic Mix
  • 1 cup water
  • ½ teaspoon black pepper
  • 1 ½ cups low-fat cheese (shredded)

Instructions
 

  • Preheat oven to 350°F.
  • Spray an 8x8-inch baking pan with nonstick spray.
  • Cook macaroni following package directions. Drain.
  • While macaroni is cooking, cook onion in oil for about 3 minutes over medium heat.
  • Add CNP Magic Mix, water and pepper to saucepan. Heat and stir until slightly thick and bubbly.
  • Reduce heat to medium low. Add cheese and stir until melted.
  • Add cooked pasta and cheese sauce to the baking pan.
  • Bake at 350° for 25 minutes.

Variations
  • Chicken & Broccoli - Add 1 cup cooked chicken and 2 cup chopped, cooked broccoli before baking.
 
  • Skillet Meal - Instead of baking in the oven, use an electric skillet at 350°F. Cook for 20 minutes. Stir occasionally.
 
  • Tuna Mac - Add a 5-ounce can of tuna (drained), and 1 cup of frozen or canned peas (drained), before baking.
