Peach Crisp
A crisp is a baked fruit filling with streusel crumble topping. This recipe uses the sweetness of peaches and whole-wheat cereal to create a healthier alternative to store-bought fresh or frozen pies. This recipe uses CNP Master Mix, an all-purpose baking mix that can be made ahead of time, stored easily, and used in many of our online cookbook recipes.

Ingredients
- 2 15-ounce cans peaches
- 1 ½ cups coarsely crushed whole-wheat cereal (or ¾ c oats)
- ¼ cup sugar
- ½ cup CNP Master Mix
- 3 tablespoons margarine or butter
- ⅓ cup chopped nuts, sunflower seeds, or peanuts (optional)

- Drain fruit, saving 1 Tablespoon of liquid. Arrange fruit in 8x8-inch baking pan.
- Mix fruit juice with cornstarch or flour and pour over fruit.
- Mix cereal crumbs, sugar, CNP Master Mix, and margarine. Stir in nuts or seeds, if desired. Sprinkle evenly over fruit.
- Bake at 350°F for 20-30 minutes. If using fresh fruit, pour 1/3 cup water evenly over top and bake about 30 minutes.
- Cut or scoop into nine pieces. Serve warm.
- Pair with low-fat frozen or regular yogurt.
