Scalloped Vegetables
Vary the way you serve vegetables with this recipe that uses CNP Magic Mix. Use as a side dish or bake into a casserole.

Ingredients
- ⅓ cup CNP Magic Mix
- 1 Tablespoon CNP Magic Mix
- 1 cup water or low-sodium broth
- 2 cups assorted vegetables (broccoli, carrots, corn, cauliflower, chard, potatoes, spinach, turnips, etc.)
- 1-2 teaspoons CNP Seasonings
- ¼ cup crushed cereal or bread crumbs
- Nonstick spray
Instructions
- Preheat oven to 325°F. Spray an 8x8-inch baking pan with nonstick spray.
- Steam or sauté vegetables until crisp tender.
- Combine CNP Magic Mix and water or broth in a saucepan. Stir over medium heat until smooth and thick.
- Add sauce to the vegetables.
- Add CNP Seasonings or other spice combinations, as desired. Stir well.
- Place in an 8x8-inch baking pan. Sprinkle with crushed cereal or bread crumbs.
- Bake uncovered at 325°F for 15 minutes or until heated through.
Notes
Variation
- Make it a Main Dish: Add 1 cup of cooked ham or sausage before baking for a simple casserole.
