Spicy Lentil Stew
Lentils are high in fiber and protein. Cook this stew on the stovetop or in a crockpot.

Ingredients
- 1 ½ cups lentils
- 5 cups low-sodium vegetable or chicken broth
- 2 garlic cloves, finely chopped (1 teaspoon minced or ½ teaspoon powder)
- 1 cup onion (chopped)
- 1 cup carrot (chopped)
- 1 cup green bell pepper (chopped)
- 1 15-ounce can diced tomatoes (with juice)
- 1 medium sweet potato (peeled and cut into chunks)
- ¼-½ teaspoon cayenne pepper
- ½ teaspoon cumin
Instructions
- Rinse and drain lentils.
- In a saucepan, combine all ingredients.
- Simmer for 45-50 minutes until lentils and vegetables are tender, stirring occasionally.
Notes
Variations
- Add a Grain: Serve over cooked brown rice or another whole grain.
- Crockpot Cooking: Place all ingredients in crockpot except tomatoes, sweet potato, and spices. Cook 2-3 hours until lentils and carrots are fork tender. Add tomatoes, sweet potato, and spices. Cook 1 hour until potatoes are tender.
