
Spicy Sweet Potato Soup

Ingredients
- 1 teaspoon canola oil
- 1 small green onion (chopped)
- 1 large sweet potato (peeled and diced)
- 1 garlic clove, minced (or ½ tsp minced or ¼ tsp powder)
- 4 cups low sodium chicken broth
- 1 teaspoon thyme
- ½ teaspoon cumin
- 1 cup Homemade salsa
- 1 15-ounce can garbanzo beans, drained
- 1 cup diced zucchini
- ½ to 1 cup cooked brown rice
- 2 tablespoons creamy peanut butter
Instructions
- Heat oil in a heavy pot over medium heat. Gently stir onion, sweet potato and garlic in the oil until onion is soft.
- Stir in chicken broth, thyme, and cumin. Bring to a boil; cover and simmer for about 15 minutes.
- Stir in salsa, garbanzo beans, and zucchini. Simmer until tender, about 15 minutes.
- Stir in cooked rice and peanut butter until the peanut butter has dissolved.
