Ingredients
1 ½cupslentils
5cupslow-sodium vegetable or chicken broth
2garlic cloves, finely chopped1 teaspoon minced or ½ teaspoon powder
1cuponionchopped
1cupcarrotchopped
1cupgreen bell pepperchopped
115-ouncecan diced tomatoeswith juice
1medium sweet potatopeeled and cut into chunks
¼-½teaspooncayenne pepper
½teaspooncumin
Instructions
Rinse and drain lentils.
In a saucepan, combine all ingredients.
Simmer for 45-50 minutes until lentils and vegetables are tender, stirring occasionally.

Variations
Add a Grain: Serve over cooked brown rice or another whole grain.
Crockpot Cooking: Place all ingredients in crockpot except tomatoes, sweet potato, and spices. Cook 2-3 hours until lentils and carrots are fork tender. Add tomatoes, sweet potato, and spices. Cook 1 hour until potatoes are tender.
