These sweet but tangy egg rolls make a great after school snack or stand alone dessert.

Ingredients
2mediumGranny Smith apples
1Tablespoonmargarine or butter
1Tablespoonbrown sugar
½teaspooncinnamon
6egg roll wrappers
1eggbeaten
1teaspoonpowdered sugaroptional
Nonstick spray
Instructions
Preheat oven to 375°F. Spray baking sheet with nonstick spray.
Wash, dry, peel, and chop apples into small pieces.
Heat canola oil in a skillet on medium heat. Add brown sugar and cinnamon.
Add apples to skillet and cook until they begin to soften. Remove from heat.
Divide apple mixture between 6 egg roll wrappers. Roll egg rolls and seal edges with beaten egg. Brush outside of each roll with beaten egg or spray with nonstick spray. Place egg rolls on baking sheet seam side down.
Bake at 375°F for 20 minutes until light brown and crispy.
Dust with powdered sugar, if desired.

Notes
Wrapping egg rolls
Lay egg roll out like a diamond.
Place filling across the center horizontally.
Fold up the bottom corner, not quite to the top corner.
Tighten around the filling.
Fold in both side corners toward the center. They will not meet.
