Ingredients
3cupsold-fashioned oats
2 ½cupswhole-wheat flour
1 ½cupsbrown sugar
1teaspoonsalt
½teaspooncinnamon
6ouncesdried apricotschopped
¾cupchopped walnutsoptional
¾cupcanola oil
1teaspoonbaking soda
1 ½teaspoonsvanilla
2eggs
½cuplow-fat milk
Nonstick spray
Instructions
Preheat oven to 325°F. Spray a baking sheet (any size) with nonstick spray.
In a large bowl, combine oats, flour, sugar, salt, cinnamon, apricots, and walnuts. Mix well by hand to break up any lumps.
Add oil. Work in with fingers until well blended.
In a separate bowl, combine baking soda, vanilla, egg, and milk. Mix well then pour over oat mixture. Mix with fingers. Dough will be very stiff and thick.
Form cookies using a spoon or make 1 ½- inch balls by hand. Place on baking sheet coated with nonstick spray. Press down on each cookie with wet fingertips. Bake at 325°F for 10-15 minutes.
Notes
Try your favorite dried fruit in place of the apricots.
