Banana Bread makes a great after school snack, breakfast, or even dessert. This recipe uses Master Mix, an all-purpose baking mix you can make ahead of time and store for use in many of our recipes.

Ingredients
2eggs
⅓cupWateror low-fat milk
⅓cupsugar
½teaspoonbaking soda
1 ¼cupmashed bananasabout 3
2 ½cupCNP Master Mix
¼cupchopped nutsoptional
Nonstick spray
Instructions
Preheat oven to 350°F.
Beat the eggs, water, and sugar in a bowl until they are well blended. Add the baking soda and mashed bananas.
Stir in CNP Master Mix and nuts until all dry ingredients are coated.
Pour into a 9x5x3-inch loaf pan coated with nonstick spray.
Bake at 350°F for 40 to 45 minutes or until the bread is brown.
