Coffee cake is a great recipe to try on a relaxing weekday morning. This recipe uses Master Mix, an all-purpose baking mix you can make ahead of time and store for use in many of our recipes.

2cupsCNP Master Mix
½cupsugar
1egg
⅔cupor low-fat milk
Topping
⅓cupbrown or white sugar
2TablespoonsCNP Master Mix
1teaspooncinnamon
2Tablespoonsmargarine
Instructions
Cake
Preheat oven to 375°F. Spray an 8x8-inch baking pan with nonstick spray.
Combine CNP Master Mix and sugar.
In a separate bowl, mix the egg and milk together. Stir into dry ingredients until just blended.
Pour into the 8x8-inch baking pan.
Topping
Combine dry ingredients and cut in margarine with a knife, fork, or fingers until crumbly. Sprinkle over the cake batter.
Bake at 375°F for 20 minutes. Cut into 9 pieces once slightly cool.

Variation
Add Fruit- Instead of topping, arrange apple or pear slices on cake batter in a pretty design. Sprinkle with a mixture of 2 Tablespoons sugar and 1 teaspoon cinnamon. Bake as directed.
