Gluten-Free CNP Master Mix is an all-purpose baking mix. It can be made ahead of time, stored easily, and used to make many recipes in this cookbook.

Ingredients
4cupsgluten-free brown rice flour
2Tablespoonbaking powder*
1Tablespoonsugar
1 ½teaspoonsalt
½cupcanola oil
Instructions
In a large bowl combine flour, baking powder, sugar, and salt.
Drizzle oil over dry mixture. Cut in with pastry blender, fork, or fingers until it resembles coarse cornmeal.
Store in a tightly covered container in refrigerator. Keeps 3 months in refrigerator.

*Most baking powder brands are gluten-free. However, we suggest reading the ingredient list to obtain the most accurate information. Base your decisions on the ingredient list on the package and your personal experience.
To measure Gluten-Free CNP Master Mix for recipes, stir lightly, pile into a measuring cup (do not shake), and level off. Use the same amount of Gluten-Free CNP Master Mix as regular CNP Master Mix in recipes.
Variation
Boost Nutrition: Add 1 1/3 cup nonfat dry milk powder or 1 cup dry soy milk powder in step 1. Follow directions above.
