Taco Pie

Shake up the taco night routine when you try Taco Pie. This recipe uses CNP Meat Sauce and CNP Master Mix, base mixes you can make ahead of time and store, making daily meals easier and faster to make.

Ingredients
 

  • 2 cups CNP Meat Sauce (or 1/2 pound lean ground meat)
  • ½ cup onion (chopped)
  • 1 Tablespoon CNP Mexican Seasoning
  • 1 4-ounce can green chilies (chopped and drained)
  • 1 cup shredded low-fat cheese (Monterey Jack or cheddar)
  • 1 ¼ cup low-fat milk
  • 1 ¼ cup CNP Master Mix
  • 3 eggs
  • chopped tomatoes, shredded lettuce (optional toppings)

Instructions
 

  • Preheat oven to 400°F.
  • Coat a 9-inch pie plate or 8x8-inch baking pan with nonstick spray.
  • Warm CNP Meat Sauce. If using ground beef, cook meat and onion over medium heat until beef is brown; drain fat.
  • Stir in seasoning. Spread meat mixture in pie plate and sprinkle with chilies and cheese.
  • In a bowl, beat together milk, CNP Master Mix, and eggs. Pour into baking dish.
  • Bake at 400°F for 40 minutes or until top is lightly browned. Cool 5 minutes before serving. Top with tomatoes and lettuce.
