Crustless Pumpkin Pie
If you don't have time to make that perfect crust, you can still have a delicious pumpkin pie perfect for any holiday celebration. Removing the crust also reduces calories.

Ingredients
- ¾ cup sugar
- ½ cup CNP Master Mix
- 2 Tablespoons canola oil
- 1 12-ounce can fat free evaporated milk
- 2 eggs
- 1 15-ounce can pumpkin (not pie filling)
- 3 ½ teaspoons pumpkin pie spice
- 2 ½ teaspoons vanilla
- Nonstick spray
Instructions
- Preheat oven to 350°F. Spray a 9-inch pie pan with nonstick spray.
- Combine all ingredients in a medium bowl and beat 2 minutes or until smooth.
- Slowly pour mixture into the pie pan.
- Bake at 350°F for 50-55 minutes or until a knife inserted in the center comes out clean.
- Refrigerate leftovers.
