Crustless Pumpkin Pie

If you don't have time to make that perfect crust, you can still have a delicious pumpkin pie perfect for any holiday celebration. Removing the crust also reduces calories.

Ingredients
 

  • ¾ cup sugar
  • ½ cup CNP Master Mix
  • 2 Tablespoons canola oil
  • 1 12-ounce can fat free evaporated milk
  • 2 eggs
  • 1 15-ounce can pumpkin (not pie filling)
  • 3 ½ teaspoons pumpkin pie spice
  • 2 ½ teaspoons vanilla
  • Nonstick spray

Instructions
 

  • Preheat oven to 350°F. Spray a 9-inch pie pan with nonstick spray.
  • Combine all ingredients in a medium bowl and beat 2 minutes or until smooth.
  • Slowly pour mixture into the pie pan.
  • Bake at 350°F for 50-55 minutes or until a knife inserted in the center comes out clean.
  • Refrigerate leftovers.
