Apple Snacking Rolls
These sweet but tangy egg rolls make a great after school snack or stand alone dessert.

Ingredients
- 2 medium Granny Smith apples
- 1 Tablespoon margarine or butter
- 1 Tablespoon brown sugar
- ½ teaspoon cinnamon
- 6 egg roll wrappers
- 1 egg (beaten)
- 1 teaspoon powdered sugar (optional)
- Nonstick spray
Instructions
- Preheat oven to 375°F. Spray baking sheet with nonstick spray.
- Wash, dry, peel, and chop apples into small pieces.
- Heat canola oil in a skillet on medium heat. Add brown sugar and cinnamon.
- Add apples to skillet and cook until they begin to soften. Remove from heat.
- Divide apple mixture between 6 egg roll wrappers. Roll egg rolls and seal edges with beaten egg. Brush outside of each roll with beaten egg or spray with nonstick spray. Place egg rolls on baking sheet seam side down.
- Bake at 375°F for 20 minutes until light brown and crispy.
- Dust with powdered sugar, if desired.

Notes
Wrapping egg rolls
- Lay egg roll out like a diamond.
- Place filling across the center horizontally.
- Fold up the bottom corner, not quite to the top corner.
- Tighten around the filling.
- Fold in both side corners toward the center. They will not meet.
- Line edges with beaten egg or water to seal.
- Roll up to the top.
- Bake seam side down.
