Banana Bread

Banana Bread makes a great after school snack, breakfast, or even dessert. This recipe uses Master Mix, an all-purpose baking mix you can make ahead of time and store for use in many of our recipes.

Ingredients
 

  • 2 eggs
  • cup Water (or low-fat milk)
  • cup sugar
  • ½ teaspoon baking soda
  • 1 ¼ cup mashed bananas (about 3)
  • 2 ½ cup CNP Master Mix
  • ¼ cup chopped nuts (optional)
  • Nonstick spray

Instructions
 

  • Preheat oven to 350°F.
  • Beat the eggs, water, and sugar in a bowl until they are well blended. Add the baking soda and mashed bananas.
  • Stir in CNP Master Mix and nuts until all dry ingredients are coated.
  • Pour into a 9x5x3-inch loaf pan coated with nonstick spray.
  • Bake at 350°F for 40 to 45 minutes or until the bread is brown.

  • Spread some peanut butter on a warm slice of bread for a healthy snack.
