Banana Bread
Banana Bread makes a great after school snack, breakfast, or even dessert. This recipe uses Master Mix, an all-purpose baking mix you can make ahead of time and store for use in many of our recipes.

Ingredients
- 2 eggs
- ⅓ cup Water (or low-fat milk)
- ⅓ cup sugar
- ½ teaspoon baking soda
- 1 ¼ cup mashed bananas (about 3)
- 2 ½ cup CNP Master Mix
- ¼ cup chopped nuts (optional)
- Nonstick spray
Instructions
- Preheat oven to 350°F.
- Beat the eggs, water, and sugar in a bowl until they are well blended. Add the baking soda and mashed bananas.
- Stir in CNP Master Mix and nuts until all dry ingredients are coated.
- Pour into a 9x5x3-inch loaf pan coated with nonstick spray.
- Bake at 350°F for 40 to 45 minutes or until the bread is brown.
