Beef & Bean Burritos

Beef and Bean Burritos are easy to make when using the CNP Master Meat Sauce, a base mix of meat and spices cooked ahead of time and frozen for future use.

Ingredients
 

  • 2 cups CNP Meat Sauce
  • 1 teaspoon black pepper
  • 2 teaspoons CNP Mexican Seasoning
  • 2 cups refried beans
  • 1 15-ounce can diced tomatoes
  • 6 CNP Tortillas (or whole-wheat tortillas)
  • ½ cup Homemade salsa (or jarred salsa)
  • 1 8-ounce can tomato sauce
  • cup shredded low-fat cheddar cheese
  • Nonstick spray

Instructions
 

  • Preheat oven to 350°F. Spray a 9x13-inch baking pan with nonstick spray.
  • Combine CNP Meat Sauce, spices, refried beans and half the tomatoes in a saucepan. Heat through. Add 1-2 Tablespoons of water, if needed. Cover and simmer 5 minutes.
  • Divide the mixture between each tortilla. Roll up tortillas and place seam side down in a 9x13-inch pan.
  • Combine salsa, remaining tomatoes, and tomato sauce. Pour over burritos.
  • Bake at 350°F for 10 minutes. Top with cheese and bake until cheese is melted.

Notes

Variation
  • Enchiladas - Make filling for burritos. Lightly coat the bottom of a baking dish with Green Chili or Red Enchilada Sauce from the cookbook. Dip tortillas in sauce to coat both sides. Fill tortillas, roll, and place in baking dish, seam side down. Cover with chili or sauce and shredded cheese. Bake at 350°F for 15 minutes or until heated through.
