Breakfast Burrito
Swap out meat for eggs and take burritos to breakfast time.

Ingredients
- 2 eggs
- 2 Tablespoons low-fat milk
- salt and black pepper to taste (optional)
- ½ a potato, shredded (or ½ cup hash brown potatoes)
- ¼ cup onion (chopped)
- ¼ cup green pepper (chopped)
- ½ teaspoon garlic (minced)
- ½ cup low-fat cheese, shredded
- ½ cup Homemade Salsa
- 1 teaspoon canola oil (or nonstick spray)
Instructions
- In small bowl, beat eggs, milk, and seasonings. Set aside.
- In skillet or electric skillet, heat oil until just hot enough to sizzle a drop of water or spray the skillet with nonstick spray and heat.
- Add the potato, onion, green pepper, and garlic. Cook for 10 minutes.
- Push potato mixture to edges of skillet. Pour in egg mixture and cook.
- As eggs begin to set, gently draw a spatula through them, forming soft curds. Continue until eggs are thick and no liquid egg remain.
- Stir all ingredients together.
- Divide egg and potato mixture between two warm tortillas. Wrap and top with Homemade Salsa and shredded low-fat cheese.
