  • salt and black pepper to taste (optional)
  • ½ a potato, shredded (or ½ cup hash brown potatoes)
  • ¼ cup onion (chopped)
  • ¼ cup green pepper (chopped)
  • ½ teaspoon garlic (minced)
  • ½ cup low-fat cheese, shredded
  • ½ cup Homemade Salsa
  • 1 teaspoon canola oil (or nonstick spray)

Instructions

  • In small bowl, beat eggs, milk, and seasonings. Set aside.

  • Add the potato, onion, green pepper, and garlic. Cook for 10 minutes.
  • Push potato mixture to edges of skillet. Pour in egg mixture and cook.
  • As eggs begin to set, gently draw a spatula through them, forming soft curds. Continue until eggs are thick and no liquid egg remain.
