Cauliflower Mashed Potatoes

Ingredients
 

  • 3-4 medium potatoes (about 1 pound)
  • 1 small head cauliflower
  • 1 small onion, diced (or ¼ teaspoon onion powder)
  • 1 garlic clove (or ½ teaspoon minced or ¼ teaspoon powder)
  • ¾ teaspoon canola oil
  • ½ cup low-fat milk
  • Salt and black pepper to taste

Instructions
 

  • Wash and peel potatoes. Cut potatoes into cubes. Cut cauliflower into 1 ½ inch pieces.
  • Boil potatoes and cauliflower in a large saucepan until tender, about 20 minutes.
  • While potatoes and cauliflower are boiling, cook onion and garlic in a small skillet with oil until tender.
  • Drain potatoes and cauliflower and place in a deep bowl. Mash with a fork or potato masher until chunky. Add onion and garlic. Continue mashing while adding milk a little at a time. Mash until no longer chunky.
  • Season with salt and pepper to taste.
