Baked Meatballs
This recipe is easy to make ahead and freeze to use in varied meals. You can make these meatballs in the oven or electric skillet.

Ingredients
- 2 pounds lean ground meat (beef, turkey, game)
- 2 eggs
- 1 tablespoon dried parsley
- 1 cup uncooked oatmeal (or oat bran, cracker or bread crumbs, or crushed unsweetened cereal)
- 1 cup low-fat milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 teaspoons onion powder
- Nonstick spray
Instructions
- Preheat oven to 400℉.
- Mix all ingredients together in a bowl. Shape into 24 balls about the size of a golf ball (1 inch).
- Arrange meatballs on baking pans or sheets (any size) coated with nonstick spray.
- Bake at 400℉ for 20 minutes.
- Use a food thermometer to check that center of meatball reaches 165°F for food safety.
- To freeze for later use, chill rapidly. Freeze individually on clean baking sheets. Then, package in amounts needed for meals. Most recipes in this cookbook call for 9 meatballs. Label and freeze.

Variation
- Electric Skillet Cooking: Heat electric skillet to 375°F. Pour ½ inch of water in bottom of skillet. When water is simmering, add meatballs, cover, and cook for 15 minutes or until internal temperature reaches 160°F.
