Fried Rice
Make this dish to serve with Create Your Own Stir-Fry or other recipes that pair well with rice. Brown rice is a whole grain.

Ingredients
- 3-4 green onions (sliced)
- 2 Tablespoons canola oil
- 2 eggs (beaten)
- 3 cups cooked brown rice
- 2 Tablespoons low-sodium soy sauce
Instructions
- In a skillet or electric skillet, cook green onions in oil until tender. Add egg and cook to a scrambled egg consistency.
- Increase heat to high. Add rice and soy sauce. Stir constantly until rice is heated through.
Notes
Variations
- Add Veggies: In step 2, add 1 1/2 cups of CNP Vegetable Mix or a 10-ounce bag of frozen vegetables.
- Make it a Main Dish: In step 2, add 1 1/2 cups cooked meat (pork chops, chicken, beef, or shrimp) or tofu and cook until heated through.
