Seared Greens

Ingredients
 

  • 1 ½ pounds kale or collard greens
  • 1-2 Tablespoons canola oil
  • 4 garlic cloves, chopped (or 2 teaspoons minced or 1 teaspoon powder)
  • 1 cup water
  • ¼ teaspoon salt
  • 1 teaspoon black pepper
  • 2 Tablespoons cider vinegar

Instructions
 

  • Wash greens and cut away stems. Dry leaves.
  • Tear leaves into pieces or slice across leaves into ½-inch wide strips.
  • Cook garlic in oil in a large skillet or electric skillet over medium-high heat. Add greens and water.
  • Cover and steam for 4 minutes.
  • Uncover and stir. Add salt and pepper.
  • Continue to stir until greens shrink.
  • Add vinegar and cover.
  • Turn off heat and let stand for 5 minutes 5 minutes. Serve warm.
