Ingredients
4cupsraw potatodiced
⅓cup celerydiced
⅓cuponiondiced
¾cuphamchopped
4cupslow sodium chicken broth
1teaspoonblack pepper
⅔cupCNP Magic Mix
2cupWater
½cupshredded low-fat cheddar cheeseoptional
Instructions
Combine potatoes, celery, onion, ham and water in a stockpot. Bring to a boil and cook over medium heat until potatoes are tender, 10-15 minutes.
Stir in chicken broth and pepper.
In a sauce pan combine ⅔ cup of Magic Mix and 2 cups of water to make thin white sauce. Stir over medium heat until smooth and thick.
When sauce just beings to boil, remove from heat. Add cheese to the white sauce and stir until melted.
Stir the cheese sauce into the stockpot, and cook until heated through.
