Ham & Potato Soup

This soup uses CNP Magic Mix, an all-purpose mix that can be made ahead of time, stored easily, and used to make other dishes in the cookbook. Creamy and hearty, this dish is comforting on a cold day.

Ingredients
 

  • 4 cups raw potato (diced)
  • cup celery (diced)
  • cup onion (diced)
  • ¾ cup ham (chopped)
  • 4 cups low sodium chicken broth
  • 1 teaspoon black pepper
  • cup CNP Magic Mix
  • 2 cup Water
  • ½ cup shredded low-fat cheddar cheese (optional )

Instructions
 

  • Combine potatoes, celery, onion, ham and water in a stockpot. Bring to a boil and cook over medium heat until potatoes are tender, 10-15 minutes.
  • Stir in chicken broth and pepper.
  • In a sauce pan combine ⅔ cup of Magic Mix and 2 cups of water to make thin white sauce. Stir over medium heat until smooth and thick.
  • When sauce just beings to boil, remove from heat. Add cheese to the white sauce and stir until melted.
  • Stir the cheese sauce into the stockpot, and cook until heated through.
