Cream-of-Anything Soup

Using ingredients in your pantry or leftover vegetables or meat, this soup allows you to be creative. Choose from the list of herbs and seasonings and "anything" ingredients to create your own flavorful cream soup.

Ingredients
 

Cream-of-Anything Soup

  • 4 cups water or broth (or a combination)
  • 2 cups CNP Magic Mix
  • 1 teaspoon salt
  • chosen CNP seasonings (or your favorite herbs and spices)
  • 1 or more "anything" ingredients

Video Combination

  • 2 cups Water
  • 2 cups low-sodium chicken broth
  • cup CNP Magic Mix
  • 1 cup CNP Vegetable Mix
  • 1 cup cooked chicken
  • ½ cup celery
  • ½ cup onions
  • garlic
  • black pepper

Instructions
 

  • Combine all ingredients from the base list in a saucepan. Stir over medium heat until smooth and slightly thick.
  • Add one to three of your favorite herbs and spices.
  • Add one or more anything ingredients. Choose what you have on hand and what your family likes. Most ingredients should be cooked before adding to the soup.
  • Heat through.

  • Base:
    • 4 cups water or combination of water and chicken, vegetable, or beef broth
    • 2 cups CNP Magic Mix
    • 1 teaspoon salt (optional)
 
  • Herbs & Spices (add one or more):
    • 1 Tbsp fresh herbs or 1 tsp dried spices
    • 2 cloves garlic (or 1/2 tsp powder or 1 tsp minced)
    • 1/2 to 1 Tbsp CNP Mexican, Italian, or Herb Ranch Seasoning
 
  • Anything (add one or more):
    • 3 carrots or zucchinis, sliced and cooked
    • 1 package frozen spinach, cooked
    • 1 package frozen broccoli, cooked with 1 cup shredded low-fat cheese
    • 3 potatoes, chopped and cooked with 1 tbsp chopped onion
    • 1 can cream style corn with 1 tbsp chopped onion
    • 2 cups CNP Vegetable Mix, cooked
    • Canned, fresh, or frozen vegetables, cooked
    • Cooked meat, poultry, fish, beans, or tofu
