Ingredients
 

Salad

  • 1 package ramen noodles
  • ½ head cabbage
  • 1 apple (chopped)
  • 2 green onions (thinly sliced)

Dressing

  • ¼ cup vinegar
  • 2 Tablespoons canola oil
  • 1 Tablespoon sugar or honey
  • ½ teaspoon salt

Instructions
 

Salad

  • Break up ramen noodles and combine with cabbage, apple, and onions. Mix well.

Dressing

  • Combine vinegar, oil, sugar, and salt. Mix thoroughly.
  • Add dressing to salad and toss.

  • Ramen noodle and spice packets contain fat and sodium. This recipe is an example of adding to a food you have on-hand and making it a healthier choice.
 
Variations
  • More Crunch: Add 1⁄4 cup chopped roasted nuts or seeds (pecans, walnuts, slivered almonds, peanuts, or sunflower seeds). Roast nuts in a pie plate and bake at 325°F for 5-10 minutes or until lightly toasted.
  • Add Vegetables: Try 1 cup CNP Vegetable Mix or 1 chopped cucumber or zucchini in place of the apple.
  • Add fruit: Toss in a can of drained mandarin oranges.
