Ham & Cheese Wedges

This savory recipe makes a tasty meal. Freeze any leftovers and warm them for a quick breakfast. This recipe uses CNP Master Mix, an all-purpose baking mix that can be made ahead of time, stored easily, and used in many of our online cookbook recipes.

Ingredients
 

  • 2 cups CNP Master Mix
  • 2 eggs (beaten)
  • ¾ cup low-fat milk
  • 2 Tablespoons onion (finely chopped)
  • 1 Tablespoon canola oil
  • ½ teaspoon ground mustard (or 1 Tablespoon prepared mustard)
  • 1 ¼ cups low-fat cheddar cheese (shredded)
  • 1 cup cooked ham (cubed)
  • 1 Tablespoon margarine (melted)
  • 2 Tablespoons sesame seeds (optional)
  • Nonstick spray

Instructions
 

  • Preheat oven to 350°F. Spray a 10-inch round pan with nonstick spray.
  • Combine CNP Master Mix, eggs, milk, onion, canola oil, and mustard. Stir in ham and 1 cup of cheese.
  • Spread mixture in round pan coated with nonstick spray. Spread melted margarine and sesame seeds over the top.
  • Bake at 350°F for 30-35 minutes, or until set and lightly browned.
  • Sprinkle with remaining cheese. Bake for 5-10 minutes longer or until cheese is melted.
  • Let stand 5 minutes before serving. Serve warm.

Notes

  • Make ham & cheese muffins instead by filling a muffin tin 2/3 full. Bake for 20 minutes.
