Canned salmon is less expensive than fish from the butcher and can be kept in the pantry for many months. This pan fried dish is healthier than deep fried fish patties.

Ingredients
115-ounce can or packagewater-packed salmondrained
1 ½cupsmashed potatoes
¼cupgreen onionchopped
¼cupparsleychopped
1egg
Salt and black pepper to taste
1 ½cupscorn or bran flake cereal, or bread crumbsfinely crushed
1Tablespooncanola oil
Instructions
Mix salmon, potatoes, onion, parsley, egg, salt, and black pepper with 1 cup of bread crumbs.
Shape into 6 patties. Pat patties into reserved bread crumbs until covered.
Heat skillet or electric skillet on medium-high heat. Add oil and cook patties 4-5 minutes per side, until golden brown.
