Salmon Croquettes

Canned salmon is less expensive than fish from the butcher and can be kept in the pantry for many months. This pan fried dish is healthier than deep fried fish patties.

Ingredients
 

  • 1 15-ounce can or package water-packed salmon (drained)
  • 1 ½ cups mashed potatoes
  • ¼ cup green onion (chopped)
  • ¼ cup parsley (chopped)
  • 1 egg
  • Salt and black pepper to taste
  • 1 ½ cups corn or bran flake cereal, or bread crumbs (finely crushed)
  • 1 Tablespoon canola oil

Instructions
 

  • Mix salmon, potatoes, onion, parsley, egg, salt, and black pepper with 1 cup of bread crumbs.
  • Shape into 6 patties. Pat patties into reserved bread crumbs until covered.
  • Heat skillet or electric skillet on medium-high heat. Add oil and cook patties 4-5 minutes per side, until golden brown.
