Zucchini chips are a great alternative to fast food fries or bagged potato chips. You can cut them into chips or fries. Try using eggplant or sweet potatoes.

Ingredients
26-inchzucchini or summer squash
1egg white
¼cuplow-fat milk
½cupgrated Parmesan cheese
½cupbreadcrumbs
1TablespoonCNP Italian Seasoning
Nonstick spray
Instructions
Preheat oven to 425°F. Spray a baking sheet (any size) with nonstick spray.
Wash and cut zucchini into 3-inch sticks or cut into slices for chips.
Beat egg white in a small bowl with a fork. Add milk.
In a separate bowl, combine Parmesan, breadcrumbs, and CNP Italian Seasoning.
Dip zucchini sticks or slices into egg mixture, and then roll in breadcrumb mixture.
Place zucchini on the baking sheet.
Bake at 425°F for 25-30 minutes or until golden brown.
