Baked Zucchini Chips or fries

Zucchini chips are a great alternative to fast food fries or bagged potato chips. You can cut them into chips or fries. Try using eggplant or sweet potatoes.

Ingredients
 

  • 2 6-inch zucchini or summer squash
  • 1 egg white
  • ¼ cup low-fat milk
  • ½ cup grated Parmesan cheese
  • ½ cup breadcrumbs
  • 1 Tablespoon CNP Italian Seasoning
  • Nonstick spray

Instructions
 

  • Preheat oven to 425°F. Spray a baking sheet (any size) with nonstick spray.
  • Wash and cut zucchini into 3-inch sticks or cut into slices for chips.
  • Beat egg white in a small bowl with a fork. Add milk.
  • In a separate bowl, combine Parmesan, breadcrumbs, and CNP Italian Seasoning.
  • Dip zucchini sticks or slices into egg mixture, and then roll in breadcrumb mixture.
  • Place zucchini on the baking sheet.
  • Bake at 425°F for 25-30 minutes or until golden brown.

  • Dispose of egg and breadcrumb mixture when finished.

Variation
Switch Vegetables: Substitute zucchini with carrots, eggplant, onion, or other vegetable sticks or slices.
