Basic Vegetable Soup
This SOUPer easy recipe can be made from ingredients in the pantry for a quick dinner.

low-sodium broth
beef, chicken, or vegetable

onion

CNP Italian Seasoning

bay leaf

black pepper

10-ounce package
frozen mixed vegetables
or 2 cups

15-ounce can
diced tomatoes
Instructions
Chop the onion.
In a large saucepan, mix broth, onion, CNP Italian Seasoning, bay leaf, and black pepper. Heat.
Stir in mixed vegetables, but not tomatoes.
Bring to a boil. Reduce heat, cover, and simmer for
6-8 minutes
or until vegetables are tender crisp. Remove bay leaf and throw away.
Stir in tomatoes. Heat through.
Notes
Variations
Add Beans: Add 2 cups cooked kidney beans or 1 15-ounce can with the mixed vegetables.
Add Meat: Add 1 pound of cooked ground beef, turkey, or pork with the mixed vegetables.
