Basic Vegetable Soup

Ingredients
 

  • 4 ½ cups low-sodium broth (beef, chicken, or vegetable)
  • ½ cup onion
  • 2 teaspoons CNP Italian Seasoning
  • 1 bay leaf
  • ¼ teaspoon black pepper
  • 1 10-ounce package frozen mixed vegetables (or 2 cups)
  • 1 15-ounce can diced tomatoes

Instructions
 

  • Chop the onion.
  • In a large saucepan, mix broth, onion, CNP Italian Seasoning, bay leaf, and black pepper. Heat.
  • Stir in mixed vegetables, but not tomatoes.
  • Bring to a boil. Reduce heat, cover, and simmer for 6-8 minutes or until vegetables are tender crisp. Remove bay leaf and throw away.
  • Stir in tomatoes. Heat through.

Notes

Variations
  • Add Beans: Add 2 cups cooked kidney beans or 1 15-ounce can with the mixed vegetables.
  • Add Meat: Add 1 pound of cooked ground beef, turkey, or pork with the mixed vegetables.
