Ingredients
3-4medium potatoesabout 1 pound
1small head cauliflower
1small onion, dicedor ¼ teaspoon onion powder
1garlic cloveor ½ teaspoon minced or ¼ teaspoon powder
¾teaspooncanola oil
½cuplow-fat milk
Salt and black pepper to taste
Instructions
Wash and peel potatoes. Cut potatoes into cubes. Cut cauliflower into 1 ½ inch pieces.
Boil potatoes and cauliflower in a large saucepan until tender, about 20 minutes.
While potatoes and cauliflower are boiling, cook onion and garlic in a small skillet with oil until tender.
Drain potatoes and cauliflower and place in a deep bowl. Mash with a fork or potato masher until chunky. Add onion and garlic. Continue mashing while adding milk a little at a time. Mash until no longer chunky.
