A hearty muffin that pairs well with chili included in this cookbook. This recipe uses CNP Master Mix, a recipe made ahead and stored for use in many of our recipes.

Ingredients
1 ½cupsCNP Master Mix
1cupyellow cornmeal
3Tablespoonssugar
1 ¼ cuplow-fat milk
1eggbeaten
Nonstick spray
Instructions
Preheat oven to 400°F.
Spray 12 muffin tins with nonstick spray or line with muffin papers.
Combine CNP Master Mix, cornmeal, and sugar. Set aside.
In a separate bowl, mix together milk and egg. Add to dry ingredients and mix until moistened. Mixture should be lumpy.
Fill muffin tins ⅔ full.
Bake at 400°F for 10-15 minutes or until golden brown.

Variation
Cornbread: Instead of pouring batter into muffin tins, pour it into an 8x8-inch baking pan coated with nonstick spray. Bake for 30 minutes.
