Cornbread Muffins

A hearty muffin that pairs well with chili included in this cookbook. This recipe uses CNP Master Mix, a recipe made ahead and stored for use in many of our recipes.

Ingredients
 

  • 1 ½ cups CNP Master Mix
  • 1 cup yellow cornmeal
  • 3 Tablespoons sugar
  • 1 ¼ cup low-fat milk
  • 1 egg (beaten)
  • Nonstick spray

Instructions
 

  • Preheat oven to 400°F.
  • Spray 12 muffin tins with nonstick spray or line with muffin papers.
  • Combine CNP Master Mix, cornmeal, and sugar. Set aside.
  • In a separate bowl, mix together milk and egg. Add to dry ingredients and mix until moistened. Mixture should be lumpy.
  • Fill muffin tins ⅔ full.
  • Bake at 400°F for 10-15 minutes or until golden brown.

Notes

Variation
  • Cornbread: Instead of pouring batter into muffin tins, pour it into an 8x8-inch baking pan coated with nonstick spray. Bake for 30 minutes.
