Tangy and sweet, the pineapple and soy sauce add flavor to your protein. This recipe can be made from the CNP Baked Meatball recipe or pre-cooked meatballs.

120-ounce canpineapple chunkssave liquid
water
¼cupvinegar
1Tablespoonsoy sauce
½cupbrown sugar
3Tablespoonscorn starch
2green bell pepperschopped
½cuponionchopped
24CNP Baked Meatballsor pre-cooked meatballs
3 to 4cupscooked brown rice
Instructions
Drain the pineapple, saving the juice. Add water to the juice to make ¾ cup. Pour mixture into pan or electric skillet.
Add vinegar, soy sauce, brown sugar, and corn starch. Stir until smooth.
Cook over medium heat until thick, stirring occasionally.
Add pineapple, green pepper, onion, and meatballs. Simmer until heated through, 15-20 minutes. Use a food thermometer to check that center of meatball reaches 160°F for food safety.
