Sweet & Sour Meatballs

Tangy and sweet, the pineapple and soy sauce add flavor to your protein. This recipe can be made from the CNP Baked Meatball recipe or pre-cooked meatballs.

Ingredients
 

  • 1 20-ounce can pineapple chunks (save liquid)
  • water
  • ¼ cup vinegar
  • 1 Tablespoon soy sauce
  • ½ cup brown sugar
  • 3 Tablespoons corn starch
  • 2 green bell peppers (chopped)
  • ½ cup onion (chopped)
  • 24 CNP Baked Meatballs (or pre-cooked meatballs)
  • 3 to 4 cups cooked brown rice

Instructions
 

  • Drain the pineapple, saving the juice. Add water to the juice to make ¾ cup. Pour mixture into pan or electric skillet.
  • Add vinegar, soy sauce, brown sugar, and corn starch. Stir until smooth.
  • Cook over medium heat until thick, stirring occasionally.
  • Add pineapple, green pepper, onion, and meatballs. Simmer until heated through, 15-20 minutes. Use a food thermometer to check that center of meatball reaches 160°F for food safety.
  • Serve over brown rice.
