Swedish Meatballs

Use the Baked Meatball recipe or buy pre-cooked meatballs. This recipe uses CNP Magic mix, an all-purpose mix that can be made ahead of time, stored easily, and used to make several dishes in the cookbook.

Ingredients
 

  • 1 ¾ cup low-sodium beef or chicken broth
  • ¾ cup CNP Magic Mix
  • ½ teaspoon black pepper
  • dash of nutmeg
  • 18 CNP Baked Meatballs (or pre-cooked meatballs)
  • 4 cups cooked egg noodles or 2 medium potatoes, cut and boiled

Instructions
 

  • Stir broth, CNP Magic Mix, black pepper, and nutmeg in saucepan or electric skillet. Stir constantly over medium heat until thick and smooth.
  • Add meatballs and heat through, about 15-20 minutes. Use a food thermometer to check that center of meatball reaches 160°F for food safety.
  • Serve over noodles or potatoes.

Variation
  • Add 1/2 cup mushrooms when adding the meatballs.
